Depending on season-Sweet peas, Carnations, Chrysanthemums, Cosmos, Stocks, Calendula, Limonium, Gypsophila, Poppies. Don't knock Dahlias and Lilies.

Try growing some Spuria irises. They are carefree so long as they don't get too dry. The flowers are the best iris flowers for cutting - superior to the dutch irises used by florists. The colour range is amazing.
Shasta daisies. Also Gerbera's and Lisianthus if you are lucky enough to be able to grow them.

All the suggestions are nice. One of my favourites is Cornflowers.

then again, if you're into formal, why not hedge the beds with gardenias, there's a small variety now....is it veitchii or something? Tough and productive for me. Perfume can't be beaten for a fragrant cut flower.
