pruning lavender

Hi all you lavender lovers out there,
I know the general rule is to prune when flowering is finished, but I find myself in a dilemma with lavender. It seems to always be flowering. Does anybody know the optimum time to prune lavender in Melbourne?

| The 'Lavender Lady', who has a lavender farm near Wandin, told us to prune lavender on Melbourne Cup Day and then again at Easter. |
