Can someone tell me the name of the wattle that produces edible seeds used in cooking and the conditions it requires to grow? Also, do you know where I can access a plant or seeds?

A good one for Brisbane area is Acacia fimbriata.

I have a packet of wattle seeds here which are the sort you usually use in sweet dishes because they have a chocolatey taste. The seeds are of Acacia victoriae.

Yes Acacia victoriae is the one most commonly grown commercially for edible seed.

Acacia dealbata or Silver Wattle in South Eastern Australia

And I think also:
Acacia melanoxylon
Acacia pycnantha
