Is there any particular method of drying the flowers and retaining the fragrance?

it is difficult , but drying them slowly would be best. I dry my flowers on top of my hot water heater which is just warm. Has your oven a warming tray? Avoid using fast drying methods like a microwave. In this weather just two days in a warm dry spot with the flowers spread over some paper should be enough
In perfumery Jasmine officinalis flowers are/were infused in oil or pig fat. The fragrance of the flowers would gradually be taken up by the oil/fat. The fragrance was then somehow separated from the oil- or you could just use the jasmine scented oil as a perfume. Be sure to use an oil that has no smell of its own.
You can repeat the process and add more fresh flowers until you have a strong enough fragrance
