chocolate mint

hi there i have just bought this herb and am wondering is anyone else growing it how do i propgate the mint ive just started growing herbs im starting most of them off by seed

see how they go thanks any ideas how to use the choc mint would be greatly apreciated

You won't get chocolate mint from seeds. You must take cuttings or any runners, preferably with roots, and they'll start a new plant for you. As for uses - sprinkle some on ice cream or into milk coffee, or any chocolate drink. Add to any chocolate recipe - cookies, cakes, icings, mousse, cheesecakes, whatever - anywhere you want a chocolate/mint flavour. Crystallise the leaves or coat them in melted chocolate and use them as decorations for cakes and desserts, or just as an after-dinner treat.

how do you crystalise the leaves?

ive tried a few leaves in coffee and loved it its still only a small plant so i might have to wait a while for it to sprout runners to progate it friends of mine are envy of my new found herb lol

Brush with lightly beaten egg-white, then dip carefully into castor sugar (superfine), shaking off excess. Lay out on a baking tray and put into a very slow oven until completely dry.

This is the same method as you use to crystallise flowers such as borage or rose petals or violets etc. Laborious, fiddly and time-consuming, but ultimately rewarding. Eat for a special treat, or use to decorate cakes etc.

another good one is when you make apple sauce, use the choc mint, it is incredible.
also when you make herbal teas, add a bit, i make a mix of 5 different mints, and use it there, even with the normal mixes.. it is wonderful.

Well I saw the chocolate mint today and passed it by - not quite sure how I could use it. Now some wonderful ideas here I see I'll have to go back for it.........darn! :)
