harvesting peppermint

Hi all,
I have a lovely peppermint plant in a pot from which I gather leaves to make tea. It dies down in winter and I wonder if anyone would be able to tell me how best to harvest it in order to dry the leaves so that I can keep having tea in winter?

Pick leaves as required throughout the growing season to use fresh, or before flowering if for drying (cut back 3-6cm above the soil line). Best harvested in the morning, after dew has dried off.
