I'm in melbourne and have seen two fruit trees in blossom that i do not recognise. The blossoms are a deep pink, fuchsia colour. Anybody recogise this fruit tree? kind regards

Flowering apricot? Or some type of flowering plum? They will be "blossom" trees rather than fruit trees most likely, only producing insignificant fruit.

From my orchard days, the peaches and nectarines had pink blossom, but if it was that deep a pink it would have been an ornamental tree as Sparaxis mentioned. Doing a google "image" search on ornamental peaches, plums etc should help you find it.

I was wondering if it may have been Japanese flowering quince that you saw. Chaenomeles japonica aka C. maulei. They come in salmon, pink, white and red. They can be single, semi-double or double form blossom.
Cheers,
Dee.
