I know that when they make wine, they moderate the water and remove a lot of the fruit in order to improve the flavour. Maybe you are overwatering them???

The problem could be one of two things. 1 Frost, usually zaps the taste out of grapes in my experience or 2. an imbalance in the soil, vine not getting the right nutrients to create the cells that form taste.
