| g'day doona, we tried them dried not a bad way to go just need to make sure they are dried properly, maybe try sun drying? once dried they can be flaked whatever. our preffered ways are simply cut the stem end off and put them in an airtight jar of good vinegar, if you don't need all the heat then you can trim our seed and pulp before using. our most common method is to put them through the food processor (remove seed and pulp if don't want the heat) then bring to a slow boil fill still warm jars that have been boil sterilised and put lid on while quiet hot that gives good vacuum seal. this method they just seem to last and last, still got a 1/2 empty jar in the fridge in good condition. we would also mix them with excess tomatoes at times this cuts the heat range down on the chillies. the other way is to freeze small quantities that you would use immidiately like in soups/stews without defrosting first. did that with mushrooms worked very well just if you try to defrost and use they go all mushy. but as is the case with chillies they still keep coming, impossible to give them away fast enough or use them fast enough. len |
