Is this purple spinach or rhubarb?

Seeds were labelled as spinach. Most came up green and looking like spinach, but a few are purple and look more like rhubarb. (I think it's rhubarb; not sure because I've never actually used rhubarb.)

Two (low-res) pics showing roots and foliage can be found at the link below. Can anyone identify the plant?

Definitely not rhubarb. Rhubarb grows from a crown.

It looks like Amaranth (there are lots of different leaf colours and shapes) on the second photo. I can't figure out the first photo though... looks like large canes/stems and wilted leaves...

I'm with Rose-Marie. I think it's amaranth. It's definitely not rhubarb. Where did the seeds come from?

What did the seeds look like? Spinach seeds are either small beige-brown balls or spiny and brownish depending on the variety. Rhubarb seeds are large and flat, brown to black whereas Amaranth seeds are tiny (less then a pin-head) and either black or golden.

Sorry I can't answer your questions because the message was posted on behalf of a friend. I'll pass on any info when I hear from her ... but it looks like it's amaranth (Chinese spinach) and definitely not rhubarb.
