Seed Suggestions Please

My son, who's working on a sheep/cattle station in the Moree area of NSW, tells me he'd like to grow a few vegetables in an old garden near his jackaroo's quarters.
I've told him to dig in a bit of old cow and sheep manure (they've got plenty!), to prepare the area, but am not sure what seeds I should send him. He likes all vegetables, especially pumpkin, and has asked for seeds he can sow directly.
I'd really appreciate some suggestions as I'm not an experienced vegetable grower, nor do I know much about the conditions up there. It has rained there recently.

Pumpkin is a great idea if he has the space...so would be sweet corn, any melons...cateloupe and watermelons, cucumbers, beans, peas, swiss chard (coloured silverbeet), carrots, beetroot, lettuces (shady area), anything really

Moree is near Armidale. All the root crops all the other stuff mentioned. If he's on a station, he may need a fence for things not to eat everything in site. Up there I think are Rabbits, foxes, Rattus Rattus, and all the native buggers as well.

Thanks very much for the suggestions. I hadn't thought of corn (which he loves). At 195cm tall, he's a boy who likes his food. There's plenty of room for the garden and a fence to keep out rabbits. I don't think anything keeps rats out, does it? I guess he'll just have to experiment to see what gets eaten.

A Jack-Russel will keep rats out
I am rapidly coming to the conclusion that a Jack-Russell should be compulsory in all kitchen gardens
