Cumquat Jam

Would someone be having a good (easy to make...) receipe for cumquat jam???

Hi Elfi,

My recipe for any marmalade is the same:

1kg fruit (sliced as thin as I can get it - I have been told you can food process but have never tried cause I like rind slices in it) Save the seeds seperately.

1 to 1 1/2 Kg sugar (depending on sweetness of fruit and how tart you like your marmalade)

1 Litre water.

Method:

Put seeds in a muslin bag and place in saucepan with the fruit and water. Cook fruit and water for about an hour until the rind pieces are very soft (this may take longer the thicker the rind is cut).

Remove the seed bag (the seeds help to set the marmalade). If there are heaps of seeds like in cumquat I usually only add a small amount to make about a 2cm dia ball.

Add sugar and stir to dissolve. Then bring to the boil and simmer about an hour or until the marmalade looks firm when placed on a cold plate.

Place in sterilised jars.

Makes about 7 x 250ml jars

Thanks Fiona,
I will try it. Depending on how much fruit I've got I will also try another recipe I've found, making cumquat gelee. I've got a special pot where I can extract the juice while steaming the fruit (cut in pieces of course). So I will try both and see what we like better.
Had a look at your home page, you've got some lovely berries. Never seen yellow strawberries before.... Do they taste the same as the red ones???
