No Dig beds all done....now what shall I plant?

Hi Folks,Happy easter , hope you are all busy in the garden or preserving the fruits of....
Yesterday I laid all my backyard under pea straw and manure along with some lovely compost,I am using sleepers for edges and plan to plant it as a jungle with a mix of vegies and ornamentals. Under the clothesline i'll have Lavender and rosemary to make the washing smell nice but I'd love some suggestions if anyone has any good ideas for a symbiotic relationship, companion plants or just any "must haves".I live in the Wimmera on 5 acres with only a 17" rainfall, hot Summer winds and mostly Mediterranean climate. Yes its hard to garden in these conditions but I do have a good water supply thank goodness.
My other vegie garden is down the back paddock with the fruit trees and instead of extending it (the winds are punishing down there)I decided to utilise the 'desert' in the backyard which has better shelter....looks better already.
I thought maybe I'd have a go at espaliering a pear tree along one side of the bed...is any particular variety better than others for this?

I have a book on companion planting. There are too many suggestions to list here. If you post a list of the vegies you want to grow I can give you their suggested companions.

You could look up " garden guilds " on Google. they give you groups which grow happily together. Probbly even get a picture or two.
