I have a plant growing in the garden. When is the best time to dig out the root??. And then anyone got any good recipies for to make it into a preserve. Jan

Spring and autumn are the usual harvest times, Jan. You can make a very basic sauce by blitzing the horseradish with some white vinegar and seasonings in a blender. I once made a more complex horseradish cream by pureeing the horseradish and mixing it into a home-made mayo with some extra lemon juice and finely chopped spring onions. Be careful when you peel the horseradish. The fumes can be overpowering.

The only problem I found with horseradish is that it's invasive and very difficult to cull. If I grew it again, I'd put it in a large pot.
