With all the rain lately, we had been making quick dashes to the vege patch and overlooked what has now become a very obese zucchini. Does anyone have any recipes for an overabundance of zuke? There are only two of us, and we would be struggling to cope. It is rather twisted so would be difficult to stuff. (Think it is already stuffed to be honest!) Would appreciate any ideas. Just hate to throw it away.

Okay Raymondo, what is the recipe for this cake? Mind you, this zuke is over 1kg so we could do LOTS with it.
