espelier Nectarine

Have semi-espaliered an old Nectarine of unknown type but the fruit forms on countless laterals that come of the branches I have set horizontally. How do I control these ever growing laterals? Do I prune them back to so many buds in winter so I have some control? All I have now is a jungle growing in all directions. Not looking a bit like Peter Cundall's neat squat branches with clearly displayed fruit. Have I got a tree not suited to espalier?

Peaches and nectarines are not suited to espalier because they are too vigorous.
Europeans do it, fanning the branches onto a sunny wall because otherwise their climate is too cold. Of course the trees are much less vigorous there. The French also have some unusual shapings.
If you really want to do it, then invent a system where you can replace the old wood each year with new 1 year old branches, which are the only branches which will fruit - quite different to apples and pears.
